Located near São Paulo, Brazil, Mogiana Eagle produces low acidity green coffees allowing for a lighter touch while keeping the same overall flavor profile.
Since 2018, we've been partnering with the same producers in Brazil to bring in naturally low acidity, sweet, defect-free coffees. Because of their unique approach, we're able to bring in fresh lots throughout the year.
We mirrored the same unique approach in roasting by paying close attention to timing, heat, and airflow to execute flavor balance. This balance was achieved through meticulous testing and tasting to create a profile that reduces acidity, enhances body, and extends sweetness creating a silky, dark roast with notes of chocolate and amaretto.
