This coffee comes from an innovation hub in the Fugi Station of Rwanda. During processing, the coffee undergoes a step unique to Rwanda where the coffee dries in shaded beds for 12-72 hours. This starts the drying phase gently under the shade and allows for intense sorting while the coffee is still wet. The coffee is then protected from rain and direct sunlight in a parabolic drying structure to dry for 25-30 days.
